Raw soft nutty coconut indulgence in the inside and dark smooth chocolatey on the outside.
Gluten free, Refined Sugar Free, Soy Free, Vegan Friendly, Handcrafted
1 cup pecan nuts
1 cup dates, pitted (Soaked beforehand)
1/2 cup designated coconut
1 Tbsp coconut oil
Dash of Himalayan salt
Dark chocolate 85% (I used CocoaFair)
Place the pecan nuts in a food processor or a powerful blender (food processors work better) and blend until they have a crumbly texture.
Add the dates, designated coconut, salt and coconut oil, blend again. Roll into bite sized balls. Set aside.
In a pot, add boiling water 3/4 from the top. Place a glass bowl on top. Add the dark chocolate, allow to melt. Do not stir too much.
Place a toothpick inside each ball and dip in the chocolate. Place the dipped ball onto a grease proof paper.
Pull out the toothpick and store in a cool dry place. The fridge would be a good option during summer months.
