Chia Seed Jam

I love these tiny superfood powerhouses, called chia seeds! They are loaded with omega 3 fatty acids, rich in fibre and protein and they can easily be used to make a thick gel or as an egg replacement in vegan recipes.

The chia seeds will add enough bulk to your recipe without you having to go the extra mile or increasing the carb value of the recipe.

No pectin is needed in this recipe, like traditional jam, all you have to do for this recipe is mash up some fruit, add in a few chia seeds and within minutes the chia seeds will absorb the fruit juices and thicken the jam to make a perfect jammy consistency.

Why have regular jam when you can have superfood jam?

Bonus! The very berry chia jam is also amazing in my dairy free coconut yogurt and nut mix in the morning.

Chia seed jam

Gluten Free, Refined Sugar Free, Vegan, Superfood enriched

Ingredients

2 cups chopped berries ( I used strawberries)

2 Tbsp lemon juice

1 tsp vanilla extract (optional)

2 Tbsp agave syrup

3 Tbsp chia seeds

Instructions

Prepare the fruit by washing it, stemming and removing pits if needed.

Transfer the fruit to a small pot and allow to cook over medium to low heat. Cook until the fruit breaks down and becomes a syrup consistency.

Mash the fruit using a masher ensuring its lump free. Stir in the lemon juice, vanilla and agave. Stir in the chia seeds and combine.

Let the mixture stand for a few minutes allow the mixture to thicken.

Transfer the mixture to a jar or storage container. Store in the fridge for up to two weeks.

The jam will thicken a bit more when completely chilled. Alternatively, the jam can also be frozen.

Ensure its thoroughly thawed before using.
