No bake salami made with dates, coconut oil, assorted nuts and cranberries. A guilt free Christmas treat.
You can make this lovely nutty salami in advance, wrap it in baking paper and store in the freezer. The salami gets soft at room temperature. It can serve as a really beautiful, hand crafted gift as well.
Raw date and nut salami
Gluten free, Raw, Vegan, Refined Sugar Free
10 dates, pitted
2 Tbsp coconut oil, melted
2 Tbsp raw cacao powder
60g dried cranberries
1/2 cup raw cashews, roughly chopped
1/2 cup raw pistachios, roughly chopped
60g raw almonds, roughly chopped
1/2 cup shredded coconut shavings
In a small bowl, add the dates, cover with a little bit of hot water, just enough to coat the dates.
In a food processor, place the soaked dates, coconut oil and process. Stop and process again.
Transfer to a mixing bowl. Add in the remaining ingredients. Use your hands, mix until combined.
Shape the dough into a thick log. Roll into a baking paper, press into a log. Place in the fridge, to set for at least 6 hours before serving.
Unwrap and cut into slices using a sharp knife. Serve with fresh berries.
