I also like to call this recipe – muffin in a minute. Its super easy to make with just a handful of ingredients. Full of fibre, fiber is something I’ll do an entire post on later, but suffice it to say that fiber is essential to gut health. Ground flax is also a low carb option to chose, compared to normal flour.
Another awesome tidbit about flax seed is its very high omega-3 fatty acid content. Which helps to lower inflammation in the body.
These flax seed buns are very satisfying, filling and can be eaten any time of the day. As a snack, a meal on the go or you can make a few in advance and freeze them.
Muffin in a minute
Ingredients
2 Tbsp ground flax seeds
1 Tbsp coconut oil
1 egg
1 tsp gluten free baking powder
1/2 tsp cinnamon
Some salt
Instructions
Mix all the ingredients together in a small mixing bowl. Pour into a cup that has been greased with coconut oil. Microwave for 1 minute.
Allow to cool. Remove from cup and slice in half.
Should you want a toasty bun, heat a pan with a dash of coconut oil and ‘toast’ until warm and toasty in the middle. Serve warm with some coconut oil or nut butter.
