A ten-minute gluten free chickpea pizza base that everyone will love.
It is so fast to make it can easily serve as a healthy snack or a lazy Friday night dinner with a fresh salad.
Chickpea flour bases are originally from Italy. Also known as Socca.
I ‘ve stripped it back to the basics, i.e. the easiest way I could make it, with the fewest ingredients that everyone will love.
If you want to improve the nutritional value of this quick and easy base, you can always add your favorite toppings such as pineapple slices, red peppers, greens of choice, mushrooms and many more.
We turned it into a lovely dinner and topped it with grilled chicken slices, finely chopped red onion, cocktail tomatoes, fresh parsley, pan fried courgettes, brie cheese and some fresh chili. No side dish was needed, it was quite filling.
Chickpea flour pizza
Gluten Free, Vegan Friendly, Low Carb, Dairy Free, Kiddo Friendly
- 1 Cup chickpea flour
- 2/3 Cup luke warm water
- Dash of salt
- 1 Tbsp olive oil
- 1 Tbsp mixed dried herbs (oregano, basil, rosemary)
- 3 Tbsp no added sugar tomato Pasta sauce
- 30g Vegan Parmesan Cheese
Vegan Parmesan cheese
Makes 5 servings
- 150g raw, unsalted cashews, soaked in hot water for a few minutes
- 4 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp salt
In a large mixing bowl, add the chickpea flour, water, salt and herbs. Whisk well, ensuring there is no lumps.
Allow the mixture to rest for at least 10 minutes.
In the meantime make your vegan cheese by blending all the ingredients together in a blender.
Heat a large non – stick pan with olive oil. Add the chickpea batter to the pan and spread out evenly by tilting the pan slightly. Cook for approximately 2 mins, put the lid on and switch off the heat. 2 minutes later, flip the pizza like a pancake and cook for a further 2 mins.
Line a baking sheet with grease proof paper. Add the cooked base. Top the base with tomato paste, vegan cheese and drizzle with a dash of olive oil
Bake in the oven for 5-8 minutes. Slice and enjoy!
