One of my favorite lockdown treats. A healthy treat made with healthy fats and lots of fiber.
The dates adds a hint of sweetness without overpowering the flavour. The extra fiber will help you feel fuller, so less sugar cravings and better food choices, however there are endless reasons why we should all eat a bit more fiber rich foods.
This recipe couldn’t be more simpler and affordable too. I love to make these on the weekend as a extra little snack around the house and they work wonders in packed lunch boxes too.
Fiber rich protein balls
Vegan Friendly, Gluten Free, Fiber Rich, Snack or Dessert
Makes 20 balls
Ingredients
250g pitted dates, soaked in boiling water
250g gluten free oats
1/2 tsp ground cinnamon
2 Tbsp almond butter
125ml mixed roasted seeds
Pinch of salt
Instructions
Drain the dates, chop and process in a food processor to create a paste. Add the rest of the ingredients. It’s okay if there is bits of seeds that are still whole.
Roll the mixture into bite- sized balls and chill to set for at least an hour.
Note
These can be made in advance and kept in the fridge for up to a week.
