Healthier Choc Chip Cookies

A few days till Christmas and only now am I starting to feel the Christmas vibe settle in.

It has certainly taken a little longer for me this year to really feel the Christmas spirit. However, better late than never, here I am ready to share with you one of my favorite festive cookie recipes.

These yummy cookies are gluten free, vegan and naturally sweetened with a hint of maple syrup. It really is simple to make. Flop proof. The key ingredient is good quality dark chocolate and a pinch of salt to bring out that flavour. 

I have really started experimenting more and more with vegan recipes and I have to say I absolutely love it. I think the inspiration comes from following a more plant based lifestyle this year and really being more aware of consuming less animal products in my diet. Even if you are not vegan, I would recommend you give this recipe a try.

Sometimes baking your own Christmas cookies can be a bit of a pain in the butt, between the rolling out and cutting of the dough to the decorating with fancy piping bags and 40 different colors of icing, those Christmas cookies take an awful long time from start to finish. They look pretty and all, but mamma hasn’t got time for all that this year.

I am now 38 weeks pregnant and the idea of standing in the kitchen all day slaving away does not sound very fun to me at this stage. So here is to an easy, yummy, fuss free chocolate cookie recipe I am guaranteed you will love as much as I do.

Healthier choc chip cookies

Vegan Friendly, Gluten Free, Refined Sugar Free


300g almond flour

125ml light flavored olive oil

1 tsp gluten free baking powder  

1/2 tsp baking soda

120ml pure maple syrup 

2 tsps. vanilla extract

100g good quality dark chocolate, 70-85% broken into chunks 

Sea salt to taste


Preheat the oven to 150 degrees. Combine the almond meal, salt, baking soda and baking powder. Mix in the olive oil, maple and vanilla. 

Mix into a soft dough and form a dough ball (if the mixture it too dry add a splash of water). Fold in the chocolate.

Form into cookies using a mini ice cream scoop and placed onto a lined baking sheet.

 Garnish the cookies with some extra chocolate sprinkles. Bake for 20 minutes or until golden. 

Cool completely and enjoy!
